# What You Need:

→ Berries

01 - 1 1/2 cups strawberries, hulled and sliced
02 - 1 cup blueberries
03 - 1 cup raspberries
04 - 2 tablespoons sugar, optional, for macerating

→ Cake Layer

05 - 8 ounces pound cake or sponge cake, cut into cubes

→ Vanilla Cream

06 - 1 1/2 cups heavy cream
07 - 8 ounces mascarpone cheese or cream cheese, softened
08 - 1/3 cup granulated sugar
09 - 1 teaspoon pure vanilla extract

→ Custard

10 - 1 1/2 cups vanilla custard or prepared vanilla pudding

→ Garnish

11 - Fresh mint leaves
12 - Extra mixed berries

# How To Make It:

01 - In a medium bowl, combine strawberries, blueberries, raspberries, and optional sugar. Gently toss and let stand for 10 minutes to allow berries to release their juices.
02 - In a large mixing bowl, whip heavy cream to soft peaks. Add mascarpone or cream cheese, granulated sugar, and vanilla extract. Continue whipping until the cream is thick, smooth, and fully combined.
03 - If making homemade custard, prepare according to your preferred recipe and cool completely before proceeding.
04 - Arrange half of the cake cubes in the bottom of a trifle bowl or individual serving glasses, creating an even layer.
05 - Spoon half of the macerated berries with their juices evenly over the cake cubes.
06 - Spread half of the vanilla custard over the berries, ensuring even coverage.
07 - Spread half of the vanilla cream mixture evenly over the custard.
08 - Repeat the layering order with remaining cake cubes, berries and juices, custard, and vanilla cream.
09 - Decorate the surface with extra berries and fresh mint leaves if desired. Cover and refrigerate for at least 1 hour before serving to allow flavors to develop.

# Expert Tips:

01 -
  • Whispers of vanilla and tangy bursts of berry make every bite feel special, especially when shared unexpectedly with someone who thinks they don't like trifle.
  • It's the kind of dessert you can build ahead and tweak with whatever fruit or flavor you stumble upon in the fridge.
02 -
  • Too-wet cake makes the layers slide around when serving, so use cake that’s at least a day old or slightly toasted.
  • Letting the trifle rest in the fridge is not optional—it transforms the texture and brings the flavors together in a way nothing else can.
03 -
  • Layer the trifle in clear glasses for individual servings that show off the jewel-toned stripes.
  • If your berries are underripe, add a dash of lemon zest to bring out their flavor.
